The Daiquiri

The daiquiri is a seriously misunderstood cocktail, thanks to a few too many overly sweet, corn syrup-laden knockoffs. But when made well, the daiquiri is one of the best, and simplest, ways to enjoy good rum.

We had a huge rum revelation when traveling in Central America a few years ago: the dark, aged rum was a rich and complex as good whiskey, How had we missed that?! The good stuff is tasty enough to drink straight, but mixed with lime juice and simple syrup -- the classic daiquiri recipe -- it becomes even better. Drinking one transports us straight to the beach. We like using dark, aged rum and serving it over ice (those hot beach days and all). You can use whichever rum you like and drink the cocktail straight up if you prefer.

The Daiquiri
makes one cocktail

2 ounces aged rum
1 ounce lime juice
3/4 ounce simple syrup
1 lime wheel, for garnish

1) In a cocktail shaker, combine the rum, lime juice and simple syrup.
2) Fill the shaker with ice; cap and shake for 15 seconds.
3) Strain into a rocks glass filled with ice cubes and garnish with the lime wheel. Serve immediately.
