1 tablespoon coconut oil
2 to 3 stalks celery, cut into 1-inch pieces
1⁄2 parsnip or carrot, cut into 1-inch pieces
1⁄2 large red or white onion, quartered
7 to 10 cloves garlic, peeled
2 sprigs thyme
2 sprigs rosemary
1⁄3 cup fresh dill, chopped
5 cups water
1 tablespoon astragalus bark
1 teaspoon medicinal mushrooms, such as reishi, chaga, lion’s mane, or turkey tail (optional)
salt and pepper
In a medium saucepan, combine the cumin, fennel, and coriander seeds, and toast until fragrant.
Add the water and bring to a rolling boil for 5 minutes.
Remove from heat and add in the chamomile (if using). Let steep for 10 minutes.
Using a strainer, strain out the solid ingredients, then pour the liquid into a quart-size jar.
