Pineapple Mezcal Old Fashioned

Regardless the time of year, we like to keep a batch of Roasted Pineapple Mezcal on hand. It's the perfect addition to tiki cocktails like the Piña Ximénez and as a spirit to sip slowly on its own. This time around, we're using it as a base for our unique take on the classic Old Fashioned cocktail.

Just like the classic Old Fashioned, we start by muddling sugar in bitters. Here is where things take a turn. We substitute bourbon for our Roasted Pineapple Mezcal and stir in ice for 15 seconds. But we don't stop there. Next up, flame a stick of cinnamon until smoldering and garnish.  

Pineapple Mezcal Old Fashioned
makes one cocktail

  • 1 cube of cane sugar
  • 5 dashes of aromatic bitters
  • 3 oz of Pineapple Mezcal
  • 1 stick of cinnamon (for garnish)
  1. Add the cane sugar cubes and bitters to a cocktail mixing glass.
  2. Muddle the ingredients in the bottom of the mixing glass until the sugar has mostly dissolved. Add the Pineapple Mezcal.
  3. Add ice to above the level of the liquid and stir for 15 seconds. Strain the mixture into a rocks glass containing a single large cube of ice.
  4. Light stick of cinnamon until smoldering and garnish with flamed cinnamon stick.
