The Strawberry Rhubarb Spritz

As the heat of summer begins to climb, we cool down with a refreshing variation on an Italian classic: the Aperol Spritz.

The official drink of Venice, the Aperol Spritz is a mix of its namesake bitter Italian liqueur and sparkling prosecco. Here, we add a fresh burst of fruit to the recipe with juicy strawberries and tart rhubarb from the local greenmarket. The result is a refreshing and elegant summer sipper.

The Strawberry Rhubarb Spritz

  1. Add the strawberries, sliced rhubarb and lemon juice to The Mason Shaker.
  2. Muddle the ingredients in the bottom of the shaker until crushed.
  3. Add the shots of Aperol and ice to just above the level of the liquid. Shake for 10 seconds.
  4. Strain the mixture into a tall glass filled with ice, and fill with prosecco. Garnish with the remaining strawberries and rhubarb stalks.
