AVOCADO TOAST WITH HERBS, RADISHES AND HARISSA

Avocado toast is everywhere, and for good reason: smooth, creamy avocado contrasts wonderfully with toasted slices of hearty bread. We like topping ours with fresh herbs, crisp radish slices and dots of harissa, a spicy Middle Eastern chile paste. You can find harissa at many specialty groceries and at Middle Eastern markets. 

Avocado Toast with Herbs, Radishes and Harissa 
Makes four servings

4 slices whole-grain bread (about ½ inch thick)
2 ripe avocados—halved, pitted and thinly sliced lengthwise
2 radishes, thinly sliced
¼ cup flat-leaf parsley leaves
¼ cup roughly torn chives
Juice of ½ a lemon
1 tablespoon olive oil
Flaky sea salt and freshly ground black pepper
Harissa paste

  1. In a toaster, skillet or oven, toast the bread until crisp. Slice each piece of toast on the diagonal.
  2. In a bowl, toss the radishes and herbs with the lemon juice and olive oil.
  3. Fan the avocado slices over the warm toast, using half an avocado per slice of bread.
  4. Add a generous dot of harissa to each toast half, and sprinkle with salt and pepper. Spoon the radish mixture on top of each piece of toast, distributing evenly. Transfer to a serving plate or board and serve.
