Astragalus Broth

Prepare your veggie scraps: this is not your average plant-based broth. With the addition of astragalus—an adaptogen known for supporting the immune system—this recipe from Beauty Water adds an extra dose of wellness to each sip. So the next time you're feeling under the weather (or just craving something other than chicken noodle soup), try your hand at this nourishing broth.

Astragalus Broth

INGREDIENTS:

  • 1 tablespoon coconut oil

  • 2 to 3 stalks celery, cut into 1-inch pieces

  • 1⁄2 parsnip or carrot, cut into 1-inch pieces

  • 1⁄2 large red or white onion, quartered

  • 7 to 10 cloves garlic, peeled

  • 2 sprigs thyme

  • 2 sprigs rosemary

  • 1⁄3 cup fresh dill, chopped

  • 5 cups water

  • 1 tablespoon astragalus bark
  • 1 teaspoon medicinal mushrooms, such as reishi, chaga, lion’s mane, or turkey tail (optional)
  • salt and pepper

     INSTRUCTIONS:

    1. In a medium saucepan, combine the cumin, fennel, and coriander seeds, and toast until fragrant.

    2. Add the water and bring to a rolling boil for 5 minutes.

    3. Remove from heat and add in the chamomile (if using). Let steep for 10 minutes.

    4. Using a strainer, strain out the solid ingredients, then pour the liquid into a quart-size jar.

    5. Add the maple syrup (if using) and stir.

    6. Serve hot or cold.
