Chaga Coffee

Ever think about adding mushrooms to your coffee? If not, you're missing out! Cue chaga—also known as the "King of Mushrooms"—which is said to help support the immune system and fight inflammation. The energy boost provided by chaga will also keep you going long after the caffeine buzz has worn off. Win-win! Note: If taking medications, consult your physician before drinking.

Chaga Coffee

INGREDIENTS

For the chaga base

  • 2 gallons water
  • 1/3 cup ground chaga or 4 to 5 small chaga rocks

For the coffee

  • 4 tablespoons ground coffee
  • 4 cups chaga base

SPECIAL TOOLS

  • Light airtight jar or pitcher (that fits 1 to 1 1/2 gallons of liquid)
  • French press

INSTRUCTIONS

Make the chaga base

  1. In a large saucepan, bring the water to a boil. Add the chaga, and simmer on low for 3 to 4 hours. The volume may reduce by half, depending on your stove.
  2. Using a strainer, strain out the solids, if any, and store in a jar or pitcher in the refrigerator for up to 15 days. 

Make the coffee

  1. Place the ground coffee in a French press.
  2. In a large saucepan, bring the chaga base to a boil, then add to the French press.
  3. Let steep for 5 minutes, then press down the filter.
