Chocolate Truffles Eat What You Watch

No matter the holiday, we can't think of any more romantic gesture than these indulgent chocolate truffles. In his first book, Eat What You Watch (Dovetail 2017), YouTube star Andrea Rea of Binging with Babish channels the sultry French vibes of Chocolat. Whether your special someone is a full-blown francophile or simply a chocolate addict, this is one DIY gift that’s sure to impress.

Chocolate Truffles
Makes 16 truffles

8 ounces 70% or higher dark chocolate, chopped
5 tablespoons heavy cream
1 tablespoon unsalted butter
½ cup unsweetened cocoa powder

Optional flavorings (choose one):
2 tablespoons whiskey
1 teaspoon pure vanilla extract
5 mint leaves, very finely chopped
1 tablespoon amaretto
1 tablespoon Grand Marnier
2 teaspoons rosewater

  1. Place a bowl over a saucepan of simmering water (or prepare a double boiler). Add the chocolate, cream and butter. Stir constantly until the chocolate has melted completely and the mixture has thickened.
  2. Remove the pan from the heat, stir in the flavoring of your choice, if desired, and let cool at room temperature until the chocolate is firm, about 2 hours.
  3. Place the cocoa powder in a wide, shallow bowl. Using a melon baller, scrape the ganache into ¾-inch balls. Moisten your hands with water and roll a chocolate ball gently between your palms until it’s round and smooth.
  4. Place the ball in the cocoa powder and roll until coated, then transfer to wax paper. Repeat with the remaining chocolate. The truffles will keep for up to 1 week stored in an airtight container in the refrigerator.
